Light Chicken Soup
This soup is great for a healthy diet or simply for someone who hasn’t been feeling well (Like my family for the past two weeks). You get liquids, vegetables, lean meat and nutritious herbs.
2 quarts broth (see below)
2 large carrots sliced
2 stalks celery sliced
3-4 medium potatoes cubed
Parsley to garnish
1. First make the broth. (Follow the link and chose the chicken option)
2. After you strain the broth, add carrots, celery, and potatoes (bell peppers can be added) And boil until tender or for about 20 minutes. To check if vegetables are done, just poke them with a fork.
